Eggplant Rolls with Fava

Immerse yourself in Mediterranean flavors with delicate eggplant rolls filled with smooth fava bean paste.   • Garlic 2 heads
  • Eggplants 2 pcs
  • Olive Oil 20 g
  • Fava 250 g
  • Tahini (sesame paste) 60 g
  • Lemon Juice 10 g
  • Water 20 g
  • Sumac 5 g
  • Pepper 5 g

INSTRUCTIONS

  1. Peel the garlic. Wrap each bulb in foil. Cut off the tops to expose the cloves.
  2. Roast at 200°C (390°F) for 40-45 minutes.
  3. Meanwhile, slice the eggplants. Sauté it in olive oil on both sides, seasoning with salt.
  4. Let the garlic cool, and then separate it into cloves.
  5. Blend them with fava beans, tahini, lemon juice, water, salt, and spices. Add water if it necessary. Enjoy your meal
